Poppies are to Castroville as bluebonnets are to the hill country. This unique town started as a colony by settlers from the Alsace region of France. Henri Castro was a Frenchman from a prominent Jewish family of Portuguese ancestry. Through his efforts more than 1,200 immigrants inhabited Castroville starting in 1844. They brought their language, customs and architecture with them.
